Homemade Watermelon Ice Lollies

Our friends over at Eco Rascals know how quickly a tasty ice lolly can change a day. Children consider them to be treats so lollies are a great way to give them healthy yet delicious snacks.

As well as just making children happy, they also help them to stay hydrated, reduce waste by using up leftover fruit and veggies and they also help relieve pain from teething.

This lolly recipe is suitable for children from around one year and up. For smaller children who are just starting out on their baby led weaning journey, you can use the little food feeders and freeze some breastmilk mixed with a fruit or vegetable that they enjoy. 

Equipment:

Blender

Ice Lolly Moulds

Ingredients:

3 cups watermelon
1 cup coconut milk
1 cup kiwi (blended)

Method:

Blend the watermelon and share between the ice lolly moulds. Place in the freezer for one hour. Remove and add a layer (approximately 50mm) of coconut milk. Put back in the freezer for one hour. Remove and add a thicker layer of blended kiwi. Freeze overnight before serving.

Each recipe can make between 4-6 lollies and look wonderful served up with cut fresh fruit.
